Bajji Ambat

Bajji Ambat main ingredients are amaranthus,coconut, onion and toor dal.
Masala consistency is fine paste.

Ingredients

 Amaranthus 1 bunch
 Toor dal 1/2 cup
 Onion 1 medium for curry
 Onion 1 small for tempering
 Dry red chilly 2 (long)    6(short)
 Salt 2 tsp
 Tamarind 1 small
 Grated coconut 1/2
 Oil 1 tbsp

Method

  1. Pressure cook 1/4th cup toor dal for 4-5 whistles.
  2. Chop the amaranthus and  1 medium onion.
  3. Add cooked toor dal and step 2 into a vessel and bring it to boil.
  4. For preparing masala
    1. Grind grated coconut,dry red chillies and tamarind together to a fine paste.
    2. Keep it aside
  5. Once amaranthus cooks add 2 tsp salt and add the masala.
  6. Bring curry to a boil. 
  7. For tempering add 1 tbsp of oil into kadai pan
  8. Add 1 small finely chopped onion.
  9. Once the onion turns golden brown add it to curry and close the lid.
  10. Ready to serve with rice.
