Pagila Podi authentic and traditional konkani recipe.
A very simple and delicious fritters. Spine gourd is coated with masala of rice,thoor dal and few less spice red chillies and deep fried. Simple to make.
If you don't like deep fry, you can roll each piece in semolina(bombay rava) and tawa fry.
Dip the piece and coat well in rava and place on hot tawa ,add 2-3 tsp oil and close lid. Cook for 1 min on low flame and then flip, again add oil close lid and cook for a min. Ready to serve.
Goes good with any dishes. Especially tastes great with our kuldevu daalithoy(dal curry with tadka,most adored dish in konkan culture).
Preparation time - 1 hr 30 min.

Ingredients
  1. Spine goud (teasel gourd) - 1/2 kg
  2. Byadgi chilly(less spice red chilly) - 9
  3. Dosa\Raw rice - 1/2 cup
  4. Thoor dal - 1/2 cup
  5. Coriander seeds - 1 tsp
  6. Asafoetida paste/powder - 1/2 tsp
  7. Tamarind - 1 small lemon sized
  8. Salt - 1 tsp
  9. Oil for deep fry
Method

  1. Take 1/2 kg spine gourd(teasel gourd).Wash and cut into long thin pieces.
  2. Soak 9 Byadgi chilli (less spice red chilly) in water for 1 hour.
  3. Soak 1/2 cup Dosa rice in water for 1 hour
  4. Soak 1/2 cup Toor dal in water for 1 hour
  5. Add soaked chilly(do not add it's water),1 tsp coriander seeds,1/2 tsp Asafoetida paste or powder,1 tsp salt,little chilly soaked water,tamarind into mixy jar and grind to fine paste.
  6. Wash soaked toor dal,drain water add them to mixy jar and grind to fine paste.
  7. Wash soaked rice,drain water, add to mixy jar and grind to coarse paste.
  8. Add masala into a vessel,masala should be little salty,add salt if required.
  9. Start applying masala to spine gourd, spine gourd should coat well in masala.
  10. Let it rest for 1 hour so that it marinates well.
  11. Freeze remaining masala in an air tight container,You can use this masala to make potato fries or any other fry item
  12. Add oil to a kadai,Heat and start frying on medium flame.
  13. If you don't like too crispy,fry till red.Once bubbling reduces, flip.Again when bubbling reduces remove from oil and start frying second batch.
  14. Next batch I am going to fry till extra crispy.For that you need to fry till light brown.
  15. Both tastes great. One is crispy from outside and soft from inside. Second one is super crispy
