Banana flower or Banana blossom are the blossoms from a banana tree. They're a completely edible delicacy. 
To prepare banana flower chutney we roasted cumin seeds+chilly in ghee and grind it with coconut.

The fact is each part of banana tree is used for various purpose. For example: 

  • Banana leaf used for cooking, wrapping and food serving.
  • Banana stem has high water content - it's juice cures kidney stone and are also used to prepare salad , curry etc.
  • Banana fiber are used to tie flowers together etc.
  • Banana fruit ripe ones are used to perform pooja (in Hindu religion) and raw ones are used to prepare curry etc.

Ingredients

  1. Banana flower petals/cover - 8 to 10
  2. Ghee - 1 tsp
  3. Cumin seeds/jeera - 1 tsp
  4. Short chilly - 4 (spicy)
  5. Tamarind - Small lemon sized
  6. Salt as per taste
  7. Grated coconut - 1 fistful

How To Clean Banana Flower/Blossom

  1. Take 1 Banana blossom and peel it's cover and separate the cover and flower till you see white portion(refer the video above).
  2. You can prepare chutney out of the white portion. In Kerala they prepare it's chutney called chammanthi.
  3. You can make chips/fries of those tiny flower.
  4. You can make chutney from banana flower peel/cover.

Chutney Recipe

  1. For this chutney, We need 8-10 flower petals.
  2. Chop the petals into square pieces and let it sit in water for 15 min.
  3. In a tawa, add 1 tsp ghee, 1 tsp cumin seeds.
  4. After few seconds, add short chilly 4 (spicy).
  5. Fry them for about 1 min and transfer it to a plate.
  6. In same pan, Squeeze out excess water and drop the chopped petals in pan.
  7. Saute till it's color changes. It takes 2-3 min. Once done transfer to a plate.
  8. To same pan add 1 fistful grated coconut. Sautee till it turns light brown .
  9. Once color changes, Transfer to a plate and turn off flame.
  10. After all cools down, transfer it to a mixy jar.
  11. Add salt as per taste and tamarind, add little water and grind to fine paste.
  12. Chutney is ready.
  13. You can serve this with chapati or with rice
