Banana Flower Chutney
Chammanthi (Chutney)
Banana flower or Banana blossom are the blossoms from a banana tree. They're a completely edible delicacy. 
Chammanthi, is a Kerala style chutney.
Chammanthi is made by stir frying tender part of banana flower, coriander seeds, garlic pods and dry red chilly.
Chammanthi can be served as  side dish or with rice and curd.

The fact is each part of banana tree is used for various purpose. For example: 

  • Banana leaf used for cooking, wrapping and food serving.
  • Banana stem has high water content - it's juice cures kidney stone and are also used to prepare salad , curry etc.
  • Banana fiber are used to tie flowers together etc.
  • Banana fruit ripe ones are used to perform pooja (in Hindu religion) and raw ones are used to prepare curry etc.
With banana flower you can make 4 different recipes.
  1. Tender banana flower chutney(Chammanthi)
  2. Banana flower cover/petals chutney
  3. Banana flower chips/bajo
  4. Bondi sukke (stir fry) coming soon

Ingredients

  1. Banana flower - 1
  2. Ghee - 2 tbsp
  3. Coriander seeds - 1 tbsp
  4. Garlic pods - 5 pods
  5. Byadgi chilly - 2 (less spice chilly)
  6. Tamarind - small piece
  7. Salt as per taste
  8. Grated coconut - 2 fistful
  9. Water - half cup

Method (YouTube video - 1min 50 sec)

  1. Remove banana flower petals/cover and inner flowers till you see white portion of banana flower.
  2. Cut the white portion of banana flower and chop them finely.
  3. Let it rest in water for 10-15 min.
  4. Heat a tawa, add 1 tbsp ghee. squeeze the excess water of chopped banana flower and place them in tawa.
  5. Fry till it gets soft and once done transfer to a plate and allow to cool down.
  6. On same tawa add 1 tbsp ghee, add in 5 peeled garlic pods, 2 dry chilly, 1 tbsp coriander seeds fry them till garlic pods turn gold in color. Turn off flame.
  7. In a mixer grinder, add 2 fistful grated coconut, fried coriander seeds, garlic, chilly, banana flower amd small piece tamarind.
  8.  Add salt as per taste, pour little water and grind till fine paste.
  9. Ready to serve..!
