Mattu Gulla Baarth

Brinjal Charred Dish
Gulla Baarth or Gulla Bharath is made by charring brinjal(usually the green ones) on flame or on charcoal.
The flavour of roasted brinjal enhances the taste. Simple recipe which is my favorite and made when I want homely food. Gulla baarth goes good with rice and dal curry(dalithoy) or with rice porridge.
The name of the dish sounds similar to baigan ka bartha which is made by roasting brinjal, minced with onion, tomato and other spices.

Note: Gulla baarth masala should be mild in color with a hint of spiciness. Adding more onion and coconut oil tastes too good.

Serves- 5 people

Ingredients

  1. Brinjal - 1 medium sized (green or eggplant, the purple big ones)
  2. Coconut oil- 3 tbsp.
  3. Short chilly - 3 to 4
  4. Grated coconut - ½ coconut
  5. Tamarind - small piece
  6. Water - ½ cup
  7. Onion- 1 medium
  8. Salt as per taste

Method

  1. Wash the brinjal and apply oil.
  2. Roast it on medium flame or on charcoal. Out skin color changes now turn off the flame.
  3. Keep aside in a bowl with lid closed. So that the flavor remains intact. Allow it to cool down.
  4. In a pan, pour little coconut oil, add 3-4 short chilly. This short chilly is spicy. Fry for a minute.
  5. In a blender add half grated coconut, fried chilly, small tamarind, salt as per taste. Pour little water and grind to fine paste.
  6. Once done with grinding, pour the masala to a bowl add in 1 medium sized chopped onion and adjust the consistency adding water. 
  7. Before serving pour 2 tbsp of coconut oil and serve with rice, dal or with rice porridge.
