Baby corn fritters
Baby corns are cut into half, dipped in gram flour and are coated with semolina before deep frying it. The crispy texture and crunchiness is perfect to serve as starters.

Ingredients

  1. Baby corn - 1 packet(200gram)
  2. Salt powder - 1 tsp
  3. Gram flour - 1 cup 
  4. Asafetida powder - 1/4 tsp (hing)
  5. Kashmiri chilly powder - 1/2 tsp (for color)
  6. Chilly powder - 1/2 tsp (for spiciness)
  7. Water as required(less than 1/4 cup)
  8. Oil to fry

Serves - 5 people

Method

  1. 1 packet of baby corn consists 10-12 pieces.
  2. Wash the baby corn and cut them into half. Cut using a knife and make sure you hold baby corn and place the knife between your fingers to avoid breakage of baby corn.
  3. Add 1 tsp salt powder and mix well.
  4. At the same time prepare the batter. In a bowl, add asafetida, kashmiri chilly powder, chilly powder and gram flour. Mix well
  5. Now pour little-by-little water and make a semi thick batter. Here I am adding the salt water of baby corn. You can skip this and add salt as per your taste.
  6. Dip the baby corn in batter one by one and then coat them in semolina(bombay rava).
  7. Once you coat baby corns in semolina deep fry in medium flame without any delay. If baby corn stays coated in semolina for more time it will absorb water and it doesn't taste good.
  8. After a 30sec, stir and fry till golden brown. 
  9. Ready to serve as starters or as side dish.
