Soft Fluffy Dosa |
Soft fluffy dosa's are prepared by grinding rice, urad dal, fenugreek seeds and cooked rice to smooth paste and fermented for around 8-10 hours.
The cooked rice makes the dosa super soft and fluffy. You can serve the dosa with any chutney or with gashi(vegetable curry).
Note: You can make thick or thin any type dosa of your choice. Thick dosa is soft and thin dosa is crisp.
Ingredients
- Dosa rice - 1 cup
- Urad dal - 1 fistful
- Fenugreek seeds - ¼ tsp
- Cooked rice - 2 fistful (red or white any cooked rice)
- Water as required to grind batter and to wash the grinder
- Salt as per taste
- Little oil to apply on tawa
- Ghee/butter to apply on top to dosa
Serving- 10 to 12 dosa
Method
How to grind the dosa batter
- Soak dosa rice, urad dal, fenugreek seeds together for 5-6 hours.
- Wash the above for 2-3 times and drain the water.
- Add cooked rice and the step 2 to a grinder, pour little by little water and grind to fine paste.
- Remove the batter in a vessel, wash the grinder with 2-3 cups of water and keep it aside for later use in separate vessel.
- Close the lid and ferment according to your weather temperature condition
- If temperature more than 25 degree Celsius, ferment for 8-10 hours.
- If temperature less than 25 degree Celsius, ferment for 15-18 hours.
How to make dosa
- After fermentation the dosa batter will double in size.
- Now transfer the required batter in separate vessel, add salt as per taste mix well and refrigerate remaining batter. (because once you add salt to batter the batter will start to sour. To avoid we are refrigerating without adding salt).
- Heat a tawa, once you feel tawa is hot enough pour 1 tsp oil and spread it using a spatula.
- Pour a ladleful batter on the tawa and spread a bit(just spread not fully). Allow the steam to pass. You will observe bubbles popping up now close a lid and cook for a minute on medium flame.
- Open the lid and pour 1 tsp ghee/butter and flip the dosa and cook the other side on low flame for a minute.
- Ready to serve with chutney or with vegetable curry
