Kuvale Sasam is a Konkani style ash gourd curry. It is a coconut based gravy flavored with mustard seeds and short dry red chilly. In Konkani "Kuvale" means Ash Gourd and "Sasam" means Mustard Seeds. A healthy dish and a great way to add ash gourd to your diet.

Serves - 4 people

Note: For this recipe you need mature ash gourd which as good amount of ash on it's skin and big seeds inside. While boiling ash gourd do not add too much water as ash gourd releases water when boiling.

Ingredients

  1. Ash gourd - ½ kg
  2. Fresh grated coconut - ½
  3. Ramnad dry chilly - 5 (short, spicy and gives less color)
  4. Tamarind - small lemon sized
  5. Dosa rice - 1 tsp (optional for thickness)
  6. Water - 2 glass
  7. Salt as per taste
  8. Mustard seeds - 1 tsp
  9. For tempering
    1. Oil - 2 tsp
    2. Mustard seeds - ½ tsp
    3. Curry leaves - 1 sprig

Method



  1. Cut the ash gourd, remove the upper part, seeds and skin.
  2. Chop into big pieces and place them in water and wash.
  3. In a vessel, pour 1 glass water and add the chopped ash gourd, salt as per taste and cook on medium flame till soft.
  4. For masala, fry 5 short dry chilly in little oil for a minute. Keep it aside.
  5. In grinder or blender add ½ grated fresh coconut, fried chilly, small lemon sized tamarind ½ water and grind to coarsely. 
  6. Then add 1 tsp dosa rice for thickness(optional) and 1 tsp mustard seeds grind for 2 rounds and remove the masala. Wash the grinder with 1 glass water and keep it aside for later use.
  7. Check if the ash gourd cooked well. Then add the masala and mix well slowly. If required add the grinder washed water and adjust the consistency.
  8. Give it a good boil and turn the flame off. 
  9. For tempering
    1. Heat coconut oil in a pan
    2. Add mustard seeds, allow it to splutter
    3. Add curry leaves and add it to curry
  10. Mix well, ready to serve.
