Peanut Stuffed Capsicum


Stuffed Capsicum Stir Fry
Main ingredients used to make stuffed capsicum stir fry are roasted peanut, dry mango powder, coriander seeds powder, cumin powder, chilly powder and so on.

This dish is made in different ways so you can add the spices of your choice. Stuffed capsicum stir fry tastes delicious with curd rice, rice porridge or with any food as side dish.

You can also find boiled potato stuffed to capsicum but it takes too long time. Here is our version, recipe from my sister-in-law. This dish can be made in less than 15 minutes so hope you will like it.

Ingredients

  1. Peanut/groundnut - 1 cup
  2. Capsicum - 4
  3. Amchur powder(dry mango powder) - 1 tbsp
  4. Turmeric powder - ½ tsp
  5. Kashmiri chilly powder - ½ tsp
  6. Chilly powder - ¼ tsp
  7. Coriander powder - 1tsp
  8. Cumin powder (jeera) - ½ tsp
  9. Salt - ¾ tsp
  10. Coconut oil - 2 to 3 tbsp
  11. Water as required to sprinkle(so that it helps in cooking capsicum)

Method

  1. Heat a pan, add 1 cup peanut and dry roast till aromatic or till you see cracks on peanut. This takes less than 5 minutes.
  2. Turn off the flame and transfer it into a plate let it cool down.
  3. Wash 4 capsicum, make a cut just below it's stem and remove it's seed and upper part(so that you are able to stuff the grounded powder.)
  4. Place the capsicum in a bowl and add ¼ tsp salt powder mix well. Keep it aside for 5 minutes
  5. Once the peanut has cool, peel it's skin by rubbing it between your palm with both hands. Or peel the skin individually.
  6. Add it in a blender and ground it to a fine powder.
  7. Transfer the fine peanut powder into a bowl add all the powder mentioned above in ingredients such as amchur, turmeric, chilly, kashmiri chilly, coriander, cumin, salt powders. Mix well
  8. Now stuff the powder inside the capsicum and keep aside.
  9. Heat a kadai, pour oil and place the stuffed capsicum. Sprinkle few water about ½ cup on low flame close the lid and cook for 3-4 minutes till capsicum changes color. (You will see browning of lower side).
  10. Turn it around, sprinkle few water and cook for a minute on other side.
  11. Turn off the flame and serve hot with curd rice or with any food as side dish.
