How to make Puli Koddel | No Onion No Garlic Recipe | Ash Gourd Konkani GSB Recipe

 
Puli Koddel - Ash Gourd Curry
Puli Koddel

Puli Koddel is a curry made from ash gourd. This is a no onion no garlic curry.
Puli Koddel means sour curry. This curry is made using ash gourd, coconut, black sesame seeds, coriander seeds, fenugreek seeds etc. Adding tamarind pulp gives the perfect tangy flavour to the curry with mild sweetness of jaggery.
Kuvale puli koddel is quite famous during GSB temple festivals.

Serves - 4

Ingredients

  1. Tamarind - 13 gram
  2. Ash gourd - 500 gram (chopped in big cubes)
  3. Water - 3 t o4 cup as required
  4. Salt - 1 tbsp
  5. Raw rice - 1 tbsp
  6. Black sesame seeds - 2 tbsp
  7. Oil - 2 tsp
  8. Turmeric - 1 small piece
  9. Fenugreek seeds - 1 tsp
  10. Coriander seeds - 1 tbsp
  11. Byadgi chilli - 4 (color)
  12. Grated coconut - 3 tbsp
  13. Jaggery - 30 gram
  14. Coriander leaves - 2 tbsp
  15. Oil - 2 tsp
  16. Mustard seeds - ¼ tsp
  17. Curry leaves - 1 sprig

Method

  1. Soak tamarind in little water.
  2. Chop ash gourd into big cubes. In a cooking vessel, add water till it immerses, salt to taste and close lid cook till 80%.
  3. Wash raw rice and add it in thick bottomed pan. On low flame, saute till aromatic.
  4. Add sesame seeds and saute till it splutter. Keep aside.
  5. Add little oil, small piece turmeric, fenugreek seeds, coriander seeds one by one and saute till aromatic.
  6. Add red chilli little oil and saute for a minute on low flame once done keep aside.
  7. Add grated coconut saute on low flame till golden brown. Keep aside let it cool down. Later grind to a coarse paste adding water.
  8. Once the ash gourd as cooked to 80% add in the jaggery and tamarind pulp bring it to a boil. Add in the masala and adjust the consistency according to your need. Mix well cook for a minute on low flame.
  9. Add chopped coriander leaves mix well give it a tempering of oil, mustard seeds, curry leaves.
  10. Stir and turn the flame off. Serve hot as side dish with rice.
