Patoli a sweet wrapped in turmeric leaves
Patoli, a Konkani sweet delicately steamed in turmeric leaves. The batter is made by grinding dosa rice and coconut, sweet filling is made by mixing coconut, jaggery, cardamom.

Step-by-step preparation of this aromatic treat, perfect for festive occasions.

Makes 12 patoli

Ingredients

For Batter

Dosa rice - 100 gram (½ cup)
Grated coconut - 2 tbsp
Jaggery - small piece
Salt - ¼ tsp
Water - ¼ cup

For filling

Cardamom pods - 10 to 12
Coconut - ½
Jaggery - 130 gram(grated)
Salt - ¼ tsp

Water to steam
Turmeric leaves - 12

Method

For batter

Soak 100 gram of dosa rice in water for 30 minutes. Wash the dosa rice and add it in a mixer grinder. Along with it add 2 tbsp grated coconut, small piece jaggery, little salt to taste. Add tablespoons of water little by little and grind to smooth paste. The batter should be thick in consistency. Keep aside.

For filling

Grate half coconut. Peel the cardamom and pound the cardamom seeds to powder. 130 gram grated jaggery, salt to taste. Pound them together so that everything mix well. Please note: Do not grind this. Mix well and keep aside.

For Steaming

Wash and wipe the leaves. Chop both the edge of the leaves. If the leaves are long, you can cut them into half. Place them on a clean table. Spread the rice batter on the leaves. Fill in the sweet mixture lengthwise from top to bottom. And fold the leaf. Refer the image below. 

In a steam, pour water as shown in the video. Place the steamer plate and place all the leaves on it as shown in the video. Close the lid and steam for 30 minutes on medium flame. Ready to serve. Serve hot with ghee.
