Horse Gram Salad
Previously, we made Kulitha Kadi a horse gram stew. It's thick and hearty dish prepared by grinding a portion of horse gram along with tomatoes and green chilies, resulting in a lusciously dense texture that's a delight to slurp!. Now, let's make Salad. Please note I used 180 gram horse gram. Half of it using it here. Other half made stew check here KULITHA KADI.

Kulith Salad, also known as Kulitha Kismuri in Konkani, is a wholesome and flavorful horse gram salad made Konkani Style. It's a light, nutritious dish made using boiled horse gram, freshly grated coconut, finely chopped onions, green chillies, and a simple tempering of mustard seeds, curry leaves and asafoetida powder.

This traditional salad is a beautiful mix of health and heritage. Known as ಹುರುಳಿಕಾಳು ಸ್ಯಾಲಡ್ in Kannada, it is especially loved for its earthy flavor and high protein content. Horse gram is a superfood in Indian kitchens and is often used for its benefits in weight loss, digestion and building strength.

Serves: 4

Ingredients:

  1. Horse gram - 90 gram (check first paragraph)
  2. Grated coconut - 1 ladle
  3. Green chili - 1
  4. Salt - 1 tsp
  5. Lemon juice - 2 tbsp
  6. Salt for horse gram - ¼ tsp
  7. Onion - 1 medium
  8. Coriander leaves - 2 tbsp
  9. Oil - 1 tsp
  10. Mustard seeds - ¼ tsp
  11. Curry leaves - 1 sprig
  12. Asafoetida powder - ¼ tsp

Method:

  1. I had soaked 180 gram of horse gram for 4-6 hours in water. Rinsed it and added it in pressure cooker with enough water till it soaks well. On medium flame pressure cooked for 5-6 whistles. Drained the water and used it to make stew. Divided the cooked horse gram in half. Now let's start with salad.
  2. In a bowl add the other half of the cooked horse gram (90 gram) and keep it aside.
  3. In a mortar and pestle, add 1 ladle grated coconut, 1 green chili, 1 tsp salt and pound it to coarse paste. Transfer it to horse gram bowl. Add 2 tsp lemon juice or tamarind pulp. Add ¼ tsp salt, 1 medium chopped onion, 2 tbsp chopped coriander leaves and mix well.
  4. For tempering, add 1 tbsp oil in a pan, ¼ tsp mustard seeds, 1 sprig curry leaves, ¼ tsp asafoetida powder. Temper it and mix well. Ready to serve with rice.
