Potato Pickle - The craving culprit.
Potato pickle is famous pickle in konkan temples. Most of them are big fan of potato pickle including me...!.
I always keep the all-in-one pickle powder handy for anytime use.
You can store the powder in an air tight dry container for 5-6 months.
If potato pickle is prepared dry,you can store it for 2 days. Dry potato pickle goes good with rice and curd.
If you don't want dry potato pickle, you can add 1/2 cup water to it and bring to a boil. You can store this for 4-5 days in an air tight dry container.

Serves - 10 people

Ingredients

Potato - 2 big sized
Oil - 4 tsp
Mustard seeds - 1 tsp
Fenugreek seeds - 1/4 tsp
Curry leaves - 2 sprig
Asafoetida powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Salt - 1 tsp
Tamarind - 1 small lemon sized
All-in-one pickle powder - add till potato coats completely.

    Take two potato, peel skin and cut into small cubes, dip in water.
    Heat a kadai, add 4 tsp oil,1 tsp mustard seeds. Let is splutter.
    Add 1/4 tsp fenugreek seeds, 2 sprig curry leaves,1/2 tsp asafoetida powder. Fry for 1/2 min.
    Add 1/2 tsp turmeric powder and fry.
    Drain potato water and add potato to the tempering.
    Add 1 tsp salt, mix well.
    Once potato cooks, add 1 small lemon sized tamarind pulp.
    This step is optional,once potato cooks,you can also add chilly powder and coriander powder. It also tastes good.
    Close lid and cook for 2 min.

    Add pickle powder till potato coats completely. If you make potato pickle dry it goes good with rice and curd.You can store for 2 days. Else you should add water to it and bring to a boil,now you can store for 5 days in air tight dry container.
