Pickle powder

All in one powder is used to make kadgi adgai, batate nonche and pitti nonche.
All in one powder can be stored in air tight containers for months.
As a kid I used to call it black pickle and now realized that it's called pittye nonche(pickle made by adding powder)😂
Tangy spicy pickle goes good with rice porridge.
Enjoy....!

Note: Here we have not added tamarind.
For adgai you need to add salted mango or bilimbi.
And for potato pickle you need to add tamarind pulp after frying the potatoes.
For other pickles like mango you do not need to add tamarind as raw mangoes are sour😊.

Ingredients

  1. Oil - 2 tsp
  2. Turmeric - 1/2 inch
  3. Asafoetida paste - 1 small lemon sized
  4. Fenugreek seeds - 1/4 cup
  5. Mustard seeds - 1/2 cup
  6. Dry short chilly - 4 cups

    Method

    1. Heat a kadai, add only 1 tsp oil, if you add more oil if becomes difficult to grind in mixy.
    2. Add 1/2 inch turmeric. Fry for a minute. 
    3. Add small lemon sized asafoetida paste. Fry till it swells.
    4. Add 1/4 cup fenugreek seeds. Fry on low flame. Once fenugreek seeds splutter add 1/2 cup mustard seeds,fry on low flame.
    5. Mustard seeds will start spluttering,wait till spluttering stops. This step is very important. Otherwise, the rawness of mustard seeds will be there and you can not store the powder for long.
    6. Remove the fried spices and keep aside.
    7. In the same kadai,add 4 cups short dry red chilly.
    8. Add 1 tsp oil, here make sure you don't add too much oil. It becomes difficult to grind in mixy if too much oil is present. Fry the chilly.
    9. Once chilly changes color turn off the flame.
    10. Let chilly and fried spices cool down to room temperature.
    11. Grind them to fine powder and keep aside for 30min. So that heat produced while grinding powder while cool down.
    12. Store them in an air tight dry container.
    13. You can use this powder to prepare kadgi adgai(raw jackfruit pickle), batate nonche(potato pickle),pittye nonche(powder pickle-mango,lemon etc).
