Today, we are thrilled to introduce you to the unique and flavorful Mangalore Cucumber. We are here to give you a series of Mangalore Cucumber recipes. This is our fourth recipe"Magge salli upkari". It is a stir fry made from the mangalore cucumber peel.
Mangalore Cucumber, also known as Southekayi or Mangaluru Sauthekayi, is a popular vegetable native to the coastal regions of Karnataka, India.

Note: 

  1. Do not throw any thing of Mangalore Cucumber. It can be used to make different dish. Check our YouTube Channel Amchi Vasari for more.

Serves - 3 people

Ingredients

  1. Mangalore cucumber peel - 140 gram
  2. Oil - 1 tbsp
  3. Mustard seed - 1 tsp
  4. Curry leaves - 1 sprig
  5. Byadagi red chilly - 1
  6. Salt as per taste
  7. Water - ¼ cup
  8. Grated coconut - 1 tbsp

Method

  1. Slice the mangalore cucumber peel.
  2. In a pan, pour oil, mustard seeds. Once it splutters add in curry leaves and byadagi red chilly mix well.
  3. Add in the sliced cucumber peel mix well and add salt as per taste, ¼ cup water close lid and cook till it is soft. Takes less than 5-8 min.
  4. Add grated coconut mix well cook for a minute. Turn off the flame and Serve hot along with rice.
