Phova Chutney and Mooga Usli |
Mooga Usli is a simple and nutritious Konkani dish made with sprouted green gram (moong/muga).
Serves - 3
Ingredients
- Green gram - 100 gram
- Water to soak
- Oil - 2 to 3 tbsp
- Mustard seeds - ½ tsp
- Green chilli - 2
- Byadgi chilli - 2
- Curry leaves - 1 sprig
- Asafoetida powder - ¼ tsp
- Salt - ½ tbsp
- Water - 2 cups to cook
- Jaggery - 1 small piece (optional)
- Grated coconut - 3 tbsp
Method
- Soak 100 gram green gram in water for 5-6 hours. Wash and drain the water. Keep the soaked green gram hanged in clean cotton cloth or place it in a strainer close lid for 8-10 hours to sprout in a warm place. (for long sprouts keep for a day)
- In a pan, add oil, mustard seeds, green chilli, red chilli, curry leaves, asafoetida powder mix well.
- Add the sprouted green gram, salt as per taste, 2 cups water mix well. Close lid and cook till soft. This takes 20-30 minutes.(You can also pressure cook the sprouted green gram in a strainer without adding water for 1 whistles on medium flame).
- Add fresh grated coconut mix well and cook for a minute. Ready to serve.
