Valval |
Valval is made from coconut milk along with mixed vegetables like pumpkin, ash gourd,
mangalore cucumber, cowpea, potato, coccinia etc.
Valval goes good with white rice and daali thoy.

For thick consistency you can add 2 tbsp maida.

Serves - 6
Ingredients
Grated coconut | 1 cup |
Coccinia | 1/4 cup |
Potato | 1/2 cup |
Pumpkin | 1/4 cup |
Cowpea | 4 |
Mangalore cucumber or Ash gourd | 1/4 cup |
Green chilly | 2 |
Asafoetida paste | 1 lemon sized |
Water | 5 cups |
Salt | 2 tsp |
Maida | 1 tbsp |
For tempering
Type 1 |
Oil - 1 tbsp |
Asafoetida powder - 1/2 tsp |
Type 2 |
Oil - 1 tbsp |
Cumin Seeds - 1 tsp (jeera) |
Asafoetida powder - 1/4 tsp |
Curry leaves - 1 sprig |
Method
- Add asafoetida paste in 1/4 cup water and let it rest.Meanwhile chop vegetables into medium sized.
- Pressure cook vegetables. Soft vegetables should be on top so they don't get overcooked.
- Add 2 cups water, 1 tsp salt.
- Pressure cook for 2 whistles on high flame.
- Blend coconut with 3/4 cup water in a blender.
- In a vessel, place a cloth/strainer and squeeze out the coconut milk.
- Keep aside thick coconut milk.We will use this at last.
- Repeat same process.
- Place light coconut milk in cooking vessel and add slited green chilly and bring it a boil.
- Then add vegetables, asafoetida water and 1 tsp salt bring it a boil.
- Same time in a separate bowl, add 1 tbsp maida(all purpose flour) and little water mix well so that no lumps are formed.
- Add thick coconut milk and maida slurry.
- Keep stirring and bring it to boil for 5min and turn off the flame.
- For tempering(tadka) - Any one
- Oil and asafoetida powder.
- Oil, asafoetida powder,cumin seeds(jeera),curry leaves.
- Both tadka had different taste. Try both.
- Ready to serve.
