Ambe gojju
Brined mango chutney is a simplest and yummiest brined raw mango gojju made with minimal ingredients. This dish goes good with dalithoy(dal curry)along with rice and also suits with rice porridge.

Note: Here we are not adding salt and tamarind as mango are brined and are sour ones. If required only add salt.

Serves- 4 people

Ingredients

  1. Brined mango - 1
  2. Coconut grated - 1 cup
  3. Short red dry chilly(spicy) - 10 to 12
  4. Garlic cloves - 6 to 8
  5. Coconut oil - 2 to 4 tsp

Method

  1. Wash mango in running water to wash out the extra salt content.
  2. Chop(if possible mash them with your hands) and separate the seed.
  3. In a pan, add few drops of oil and fry the red dry chilly for a minute on low flame. Once done turn off flame and keep it aside.
  4. In a blender add fried short red dry chilly, garlic cloves, coconut, and chopped mango little water and grind to fine paste. Check for salt.
  5. Transfer into a serving bowl mix well.
  6. Add 2 to 4 tsp coconut oil mix well here is a lip smacking dish ready to served with hot rice or with rice porridge.
